A rich and indulgent pasta dish featuring tender scallops, savory mushrooms, and a creamy parmesan sauce.

- Scallops - Tomatoes - Onion - Garlic - Vegetable broth - Olive oil - Salt - Pepper - Cream - Pasta - Mushrooms - Heavy cream - Parmesan cheese

  1. Cook pasta according to package instructions in a large pot of salted water. Drain and set aside.
  2. In a frying pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  3. Add sliced mushrooms and cook until browned.
  4. Add scallops to the pan and cook until they are opaque and lightly browned.
  5. Pour in vegetable broth and heavy cream, simmer for a few minutes until the sauce thickens slightly.
  6. Stir in diced tomatoes and grated parmesan cheese, season with salt and pepper to taste.
  7. Add the cooked pasta to the pan and toss to coat in the creamy sauce.
  8. Serve hot, garnished with chopped parsley and an extra sprinkle of parmesan cheese. Enjoy!
